Today I am sharing a pancake recipe with you that I have been loving! They are so delicious and Aviana just scarfs them down when I make them. Don’t feel discouraged if your pancakes get a little messy when you flip them. This batter can be a little flimsy. Also, if your batter seems a little thick, go ahead and add a tablespoon of water or almond milk. This recipe makes about 2-3 small pancakes.
2 Large Eggs
1 Ripe Banana
2 Tablespoons Coconut Flour (found at Whole Foods but you can also find it at Target)
1 Teaspoon Vanilla Extract
1. Mix all the ingredients together in a large bowl. Make sure to mash the banana really well with a fork.
2. Heat stove to a medium setting and grease with coconut oil.
3. Pour 2 tablespoons of batter on to skillet and cook until bottom is golden brown. Be careful when flipping. The pancake batter is quite fragile compared to traditional pancakes.
4. Top with maple syrup and your favorite fruit.
I recently started to add a dash of cinnamon to my batter and I think it gives the pancakes a really good flavor. I have also been wanting to add a little pumpkin puree. Doesn’t that sound amazing??? I just may have to try that this week!
