Hey ladies! I’ve been on a cooking kick lately and would love to share some of my recipes. I used to get so overwhelmed with cooking but I am really starting to enjoy it.
I made this bruschetta last night as an appetizer before dinner and it was delicious. My husband loved it! Aviana doesn’t like tomatoes so she scraped them off and only ate the avocado. Haha. She loves avocado! For dinner I made quinoa pasta with ground turkey and tomato sauce. This was a super easy dinner to prepare, and the bruschetta only took about 10 minutes to make.
1 Baguette (petite loaf), Thinly Sliced (about 1/2 inch)
1 Large Avocado
1 Small Lime
Sea Salt and Ground Pepper, To Taste
2 Large Roma Tomatoes, Diced
4 Tablespoons Olive Oil
2 Tablespoons Balsamic Vinegar
Preheat oven on the broiler setting.
Lightly grease baking tray with olive oil.
Place baguette slices on baking sheet and drizzle with olive oil.
Place into oven and broil for 2-3 minutes, until golden brown.
In a small bowl, smash avocado, add lime juice, sea salt and pepper.
In a medium bowl, combine diced tomatoes, olive oil, balsamic vinegar, minced garlic and sea salt.
Spread avocado onto each slice and top with tomato mixture.
Garnish with basil and enjoy!
