Pesto Chicken and Tortellini with Veggies

I have been making this tortellini dish weekly and I had to share the recipe with you all. It is a quick and easy meal to make and every one loves it!

I typically purchase all my ingredients from Trader Joe's and I love their Pesto alla Genovese (basil pesto).

Everything is cooked in one pan which is great because it requires less clean up after eating this wonderful meal!

- Olive oil
- Cubed Chicken Breast
- Uncooked tortellini
- Sun-dried tomatoes
- Asparagus
- Cherry tomatoes, halved
- Basil Pesto
- Salt

1. Add olive oil to heated large skillet. Add chicken breast and season with salt. Throw in a couple of sun-dried tomatoes and cook everything until chicken is fully cooked (5-10 minutes on medium heat).
2. Remove chicken and sun-dried tomatoes and place on a separate dish. Leave left over oil in the pan.
3. Trim the ends of the asparagus and add to the skillet. Season with salt and cook thoroughly. Once cooked, move to a separate dish (I use paper plates).
4. Cook tortellini according to instructions on package and drain.
5. Add the chicken back to the skillet and coat with the basil pesto. Stir until chicken is reheated (about a minute or so).
6. Place chicken, tortellini, and asparagus on a plate. You can add more pesto and salt if desired.
7. Top with cherry tomatoes and enjoy!
